This is the easiest, whole wheat, zero-refined sugar or artificial-sweetener cake you will find, and it is also extremely low-fat. It comes together quickly and is perfect for a light dessert or a mid-day snack.
Low-fat Date and Almond Cake
Ingredients
- 8 oz Pitted medjool dates
- 2 cups Fat-free milk
- 4 oz Unsweetened apple sauce (1 individual container)
- 150 gms Whole wheat flour
- ½ tsp Baking powder
- 1 tsp Baking soda
- ½ cup Sliced almonds
Instructions
- Heat the milk.
- Soak the pitted dates in hot milk for an hour to become soft.
- Preheat the oven to 370°F (188°C) and generously grease a 6' cake pan.
- Once the dates are soft, blend the dates and milk with the applesauce into a puree and transfer to a bowl.
- Whisk the whole wheat flour, baking soda, and baking powder into the puree.
- Pour the batter into the prepared pan. Top with the sliced almonds.
- Bake for 60 -70 minutes or until a toothpick inserted into the cake comes out clean. If the cake is browning quickly in the oven, tent it with aluminum foil to help it bake more evenly.
