These fat free muffins made with semolina and whole wheat flour are perfect for a high fiber mid-day snack.
Fat-free Date and Semolina Banana Muffins
Ingredients
- 3 Medium ripe bananas
- ¾ cup Semolina
- ¼ cup White whole wheat flour
- ½ cup All purpose flour
- 2 Egg whites
- ¼ cup Fat free milk
- 50 gms Pitted medjool dates chopped into small pieces
- 1 tbsp Honey
- 1 tsp Cinnamon powder
- 1 tsp Baking soda
- 1 tbsp White vinegar
- Cinnamon-sugar mix for topping optional
Instructions
- Preheat oven to 350° and grease/line a muffin pan. Make sure to generously grease the pan. I even grease my liner. Since these are being baked without any added fat, this step is crucial.
- In a mixing bowl, mash the bananas with a fork. Add in rest of the ingredients except vinegar and mix until well incorporated.
- Add in the vinegar and quickly mix it in well.
- Pour in the muffin pan. Top with cinnamon sugar (if using) and bake for 20-25 minutes or until a toothpick inserted comes out clean.
